April has brought warm sunny days, and it's exciting to see all the growth on the farm.We love this time of year with it's mild days, cool nights, and plants doubling in size every week!  These tomato plants were only six inches tall when we planted them a couple of weeks ago, and look at them now!

We've got some great vegetables in the Farmstand this week, from celery to cilantro, carrots and radishes, spinach and lettuce.  If you haven't tried the pea shoots yet, here's a great recipe:

Pea Shoot Pesto Spread

  • 2 c. pea shoots (one bag)
  • 2 tbsp. fresh mint leaves
  • 2tbsp. chives
  • 1 c. ricotta (cream cheese will work great as well)
  • 1 tbsp. extra-virgin olive oil
  • Salt and freshly ground pepper

Chop the pea shoots, mint, and chives fine, either by hand or with a food processor, and then add the ricotta, oil, and salt an pepper to taste, blending until it's a spreadable consistency.  It goes great with crusty bread, bagels, or even on carrot sticks or celery; really anything that is better with a schmear!

Additionally, we are one month away from our first CSA shares, and we still have space, so if you're not signed up yet, get yourself on the list here:

If you haven't heard yet, we have a fun new option this summer; we're offering a self harvest CSA option! This is aimed at famiies who really want to get their hands dirty, but maybe don't have the time or space to grow their own garden.   Every Tuesday from Mid-June through Mid-August, self-harvest members will come out to the farm and harvest their veggies, hang out on the farm, and maybe even bring friends and family out to enjoy a picnic or a walk on the nature trail!  If this is interesting to you, get signed up on the CSA signup page.  I also put together this little video to explain the idea a little more thoroughly:  https://youtu.be/0qalbEu_WSw

Finally, we have a really great selection of hanging baskets and containers, bedding plants like snapdragons and pansies, vegetable starts, and even strawberries and tomatoes in containers, ready for your patio or porch.

Thanks, and see you on the farm!
