Spoon Full Farm Happenings for November 18, 2018

Dear Spoon Full Farm Family,

Here we go. On this frosty morning, we begin to create, customize, and deliver your grass-finished meat CSA boxes, for the first time ever. (Bear with us!) 

 

Please take a moment to look over your box and to switch out any items that you may not want (not everybody loves lamb (also known as sheep) like we do!). This will ensure that every box is absolutely perfect.

If you've eaten this meat before, you know how amazing it is. You truly can't go wrong with any cut. With that said, each cut requires a different preparation and cooking technique. If you get a roast, you'll want to use an oven, smoker, or slow-cooker to cook it. If you don't have one of those things, not to worry, you should be able to switch it out for a steak. 

With that said, I encourage you to be adventurous. I remember being overjoyed with feelings of accomplishment and deliciousness, the first time I cooked a chuck roast. I shared it with friends (they were impressed) and enjoyed leftovers all week. 

Three notes about this week's delivery: 

  1. You may notice a big lamb roast that we have listed as (DISCOUNTED) - that means you get 20% off, because the package is no longer completely airtight. We discount this meat because if it stays frozen for another few months, it can develop freezer burn. It's totally fine and amazingly delicious now, we just want to offer it up while that is the case! 
  2. THIS IS GRASS-FINISHED MEAT. That means it will be more flavorful and more sensitive than "conventional" grain-fed meat. The number-one rule you will need to follow is: DO NOT OVERCOOK IT. This is especially important with respect the steaks, but applies to everything. For your meat to be tender, it needs not to be overdone. 
  3. Remember that you have a couple of days (after you receive this initial email) to edit your box, before it is finalized for delivery. You can also input your preferences on your Harvie account which will help to ensure that your box is perfect from the beginning.

It's cold out here at the farm, and getting cold in Seattle, too... perfect time to cook with an oven. Cozy cozy cozy.
