Summer Share: Week 9

It is hard to believe that August is right around the corner! If we need convinced that August is almost here, we just need to take a walk around the farm. The garlic is harvested and curing in the greenhouse. We will be harvesting sweet corn and watermelons for week 10's shares. Some of our early onion varieties are almost ready to be harvested and cured. Our sorghum-sudangrass cover crop is waist-high. Fall crops are taking off, and spring crops have been mowed. We are working hard to stay on top of the weeds, but harvesting fills a lot of our days this time of year! 

We harvested a bumper crop of yellow wax beans from this first planting. They are tender, crisp, and so flavorful. I plan to make a few batches of refrigerator dilly beans to extend our enjoyment of these beautiful beans. I'll be using this recipe: https://www.sustainablecooks.com/refrigerated-dilly-beans/

We've also been enjoying the beans blanched, cooled, and tossed with tomatoes, torpedo onions, and vinaigrette or pesto. This recipe for Warm Yellow Wax Beans in a Bacon Vinaigrette looks delicious, too.
