ALREADY? Week 18 of 20!

We are back to packing your boxes of veggies after a long weekend of camping with a group of friends. Logistics of our trip meant that we couldn’t rent the usual campgrounds so we ended up hosting one night of the trip on our farm. It was fun to share our property with friends in a recreational way and show them a little peak at what we do.

This week salad greens return with the cooler temperatures. I enjoy making leafy salads with the end of summer vegetables like onion and tomatoes. Even eggplant and squash love to be roasted and added to salads: Roasted Butternut Squash Salad.

Even though we’ve had a couple frosts in our low valleys, the vegetables in the fields above have not been damaged. This is why we still have eggplant and tomatoes. The longer the mild temperatures last the longer we’ll have this wonderful mix of summer and fall vegetables to send your way. Last year I remember having green peppers long into October.

It's hard to believe we are down to the last few weeks of your CSA.  I hope you’ve enjoyed every week. Make a resolution now to join us again next spring for another great summer of vegetables.
