In winter I often reach for a sheet pan to make quick, delicious, no fuss weeknight dinners. Dense winter vegetables like potatoes, butternut squash, cabbage, kohlrabi, onions, carrots, beets, and radishes are all perfect for roasting. I cut them up and spread them out on a sheet pan tossed with olive oil, sea salt, and rosemary. Give the pieces plenty of room; the more room between them, the better the browning. Put the pan in the oven at 425º and roast until they are golden brown.
