High Summer

These long summer days make us want to pinch ourselves at the sheer joy of living in such a beautiful place. We feast on fresh vegetables and fruits, the rivers cool us down on the hottest days, the fireflies gently light up the evenings - the earth offers so much abundance, reminding us that when we love the land, the land loves us back.

The tomatoes are beautifully ripe right now, the herbs are deliciously aromatic and we're also excited to offer fresh onions in your share this week! The onions are a sweet white variety, similar to vidalia onions, and they can be kept in the fridge until use. One of our favorite sides on a hot day is pico de gallo and these onions, paired with tomatoes and cilantro (and maybe a drizzle of sriRawcha!), will make this recipe shine.

You'll also see that green beans are back, which are great to have on hand for snacking, or for quick dishes like this skillet stir-fry for those busy weeknights (and remember - kraut brine makes a great substitute for lemon juice if you're looking for more gut-healthy alternatives!).
