Frosty Mornings, Sweeter Veggies

When temperatures drop and frost hits, only the heartiest of veggies are equipped to survive. But it's this adaptation that keeps them from dying in the cold that also makes them sweet and delicious. Have you ever noticed how much sweeter our root vegetables and greens taste in the fall and winter? 

This is due to some plants ability to convert starch into sugar. Over the course of the growing season, vegetables store up energy in the form of starches. When temperatures start to drop, they convert these starches into sugars, which act as an anti-freezing agent for their cells. They do this to keep the water in their cells from freezing, and it works in a similar way that putting salt on a road keeps it from freezing over.

But the best part? We get to enjoy the crunchy, sweet taste of a post-frost carrot. Stick with us for winter shares, the sweetest veggies are yet to come!
