Don't miss the spinach, lettuce, and strawberries this week since they love spring weather. Spinach and strawberries won't be around for very long. Picture: Shades of green growing in our vegetable fields. We're harvesting the first of the spring carrots this week, and we'll harvest the rest of this small patch of early carrots next week. These are early and special; they were planted in the shelter of a small 3 bed hoophouse so we could plant the seeds and get them to germinate even in late February and harvest in early May!
