Farm Happenings for December 11, 2021

We've been having wonderful harvest days during this mild December weather. With just a few nights below freezing, the tatsoi, arugula, baby kale, lettuce and red mustard have been going strong. We are working on the second cuttings from many of our salad greens. Second cutting leaves tend to be deeper in color and have a slightly sturdier structure. As long as we don't cut too low and kill the plant, we will be able to get multiple cuttings from the same patch. 

Below is a pic of our White Russian Kale high tunnel at sunset. This kale is a cold lover, and features tender leaves and a sweet flavor. 

We have nutty Roasted garlic chèvre, Mixed-Milk Feta, and Fleur de la Prairie for your enjoyment from Prairie Fruits Farm and Creamery. 

Please take a minute to customize your shares. If you don’t scan through the available items, you may be missing out on veggies that didn’t appear in your share, but could be swapped in or purchased. 

We have one more pickup after this coming Saturday. Our final pickup is on the 18th. 

Stay tuned for more information on what we will be offering in the January through April months. We need to assess what we have in storage (always lots of carrots), and what we can expect to harvest out of the greenhouses. We will make sure you are the first to know what the plan is.
