Digging Ourselves a Hole

Your farm has major projects happening this week.  Putting in our new root cellar is a great infrastructure improvement for our Farm Share CSA.  Read more below.


New Item: fingerling potatoes

Fingerlings are their own variety of potato, though they often get confused with new potatoes because they're also quite small. Fingerlings are fully mature and get harvested after the green upper portion of the plant has died back.

They are elongated potatoes generally the size of a finger (truly!) with knobby bits down its length. Also like new potatoes, the skin is very delicate and doesn't need to be peeled before cooking. The flavor is closer to the regular, mature potatoes we're used to and they have a firm texture that holds up well to cooking. The fall crops like potatoes, winter squash, storage onions, garlic and sweet potatoes all need to be stored in a cool, dry, dark area.  We've used our basement for many years but our fledgling farmstead cheese making has taken over that area.  Cheese needs warmer temperatures and higher humidity so storing root vegetables there is not an option.

A couple weeks ago we had a shipping container delivered.

Today our neighbor brought over his backhoe to dig a hole in the side of our hill.

The container will be buried and backfilled with dirt. This will make an ideal area for storing our crops in optimal conditions so that they will last longer into the fall and winter.
