Harvesting: Sweet Potatoes, Collard Greens, Bok Choy, Napa/Chinese Cabbage, Butternut Squash, Green Peppers, mixed Hot Peppers, Garlic, Red Potatoes, Onions, Parsley, and Carrots
Bok Choy & Napa/Chinese cabbage return after the heat of the summer cools down. Butternut Squash should be roasted whole and can be used to substitute for pumpkin.

WINTER SQUASH STORAGE reminders:
- Winter squash is best stored at room temperature. It can be damaged at temps under 50 F!
- It's so pretty it makes a nice decoration until you are ready to eat it!
- Delicata and acorn squashes are short-term storage only, and should be eaten within 1-4 weeks.
- Best way to keep squash? Clean off all dirt and wipe squash down with a rag soaked in vinegar to remove spoilage organisms. Keep them in a spot where you can check periodically. Any soft spots? Time to use!
