Onion harvest features different varieties + Last Pizza Night!

We’ve been harvesting onions over the last few weeks.  Onions are harvested once and are considered a root crop that can be stored for future use.  Fresh white and red onions are harvested first and are great in salads and burgers. The first yellow onions are often a sweeter variety and shorter storage life. The last yellow onions are usually a storage variety that will last for months in their dry papery skins.  After harvest we store them in a dry, well ventilated building. The air flow helps them to cure and dry. The truck bed here is full of onions but it is only one of many. When I peek in the buildings around the farm I see onions laid out drying and getting ready for storage.
 
Tomatoes are coming in everyday while we are still picking plenty of zucchini. Peppers are growing more slowly than usual this season but eggplant are bountiful. Potatoes and onions are crops that grow once and then we harvest and store them to give out over the weeks and months. Tomatoes, eggplant, peppers and zucchini have to be picked every other day and keep producing but don't store very long.

Harvesting: Cherry tomatoes, Slicing & medium red tomatoes, Sweet Corn (not organic), Eggplant, Red Onions, Green Bell Pepper, Jalapeño peppers, Green Summer Squash, Basil, Parsley, Garlic, Beets, Red Cabbage, Red Potatoes, Parsley, Purple Basil.  ***Sometimes we have limited amounts of the first harvests. If you love something above and didn't get any this time, change your preferences to mark that veggie as a "5" and others as something lower. NEW: Sweet Corn is NOT organic - four ears come in a bunch. Red Potatoes have thin skins and don't need to be peeled.  Red Onion is a fresh, slightly sweet onion that is perfect used raw, often in salads. Red Cabbage has a slightly different flavor than green, can be used in any cabbage recipe and also has unique recipes which feature it's beautiful color.
