Winter Roots Veggies & Greenhouse Greens

Are you loving your Winter CSA Shares?  Are you struggling to use the veggies or is it just what you expected? Are you still glad you are eating seasonally from your local farm?

I'd love to hear how your experience is going!

Baby kale, leaf lettuce and spinach are additions that we were surprised to be able to add to your selection this week. Rodale Farms is an educational farm with houses full of greens this winter and no customers. They are happy to send them to us for you. More will be on the way.

Did you know that greenhouse greens grow better in February than December and January? Even though it is just as cold or sometimes colder, the extra hours of sunlight make a big difference. Greens just don't grow much in the darkest months with the shortest daylight hours. Now that the days are getting longer, the greens will be getting big enough to cut and sell. 

Root vegetables are the staples of the winter. Before our modern grocery stores everyone had a root cellar to store their cabbage, potatoes, onions, turnips beets, and carrots. 

Try using them in combination in dishes like Winter Salad with Roasted Vegetables, or Root Vegetable Curry
