Welcome to Winter + Salad Recipe

Gorgeous fall weather in the last few weeks means that we are keeping winter out of our minds. But farmers have to use this time to prepare. As the night time temperatures begin to dip down into the freeze zone, we harvest the last of our crops and prepare equipment, animals, shelters and our mentality for the winter. Simeon worked on one of the tractors today, fixing some parts and putting in anti-freeze. Decisions have to be made about how many animals we will keep and feed on the farm this winter. 

Saturday was our last on farm market for a while. We are ready for a break but we are excited that so many of you joined our Winter CSA. That means that, even though we'll be closed on the weekends, great, organically grown farm food is coming your way.  

Farmer Reuben included plenty of greens in your shares this week. This is the perfect week to use them in Farm Greens & Sunflower Seed Salad which uses any combination of greens. Mustard Greens are spicy in a horseradish type of way. Cooking them makes them much milder but mixing them in with other greens, or adding them to a sandwich or wrap is another great way to use them. Try Greens Braised with Pancetta and Garlic. 

Don't forget to check out the extras for Grass fed Beef (stews!), cheese for your salads, mushrooms, apples, bulk sweet potatoes and bread.
