Storage and handling notes (From Farmer Phil)

Your Sweet Potatoes have already went through their curing process.

(85-90 degrees and humidity as high as we can get it for 10 days) Its like a sauna in the sweet potato room! Now they are in the storage phase (50-60 degrees and still high humidity 75-85%)

WHEN YOU RECIEVE your sweet potatoes just leave them on the kitchen counter.

WANT TO HOLD FOR A MONTH or more? Find a spot close to 55 degrees. Wrap your sweet potato in saran wrap or zip lock bag them with a small moist (not wet) paper towel to help retain their moisture.

Get to know Bok Choy -THIS IS A VEGGIE YOU SHOULD TRY!

The green part taste spinach-like with a slight bitterness.

The white part is crunchy and sweet. Eat raw in salads to get your DAILY CALCIUM.

Our favorite way is in stir fry or rice dishes.

Warmly,
Farmer Phil, John & Diane Riehm
