Here is an idea from a CSA Market Box member...
When winter squash is in season we Roast, Purée and Freeze several varieties in ice cube trays, especially when we have an abundance on hand.
Transfer them to freezer bags, label and use them throughout winter to:
- Sweeten sauces
- Thicken soups
- Add color to cashew creams/cheeses
