Farm Happenings for October 25, 2023

Hello to all of you.  Greet your family and friends for us with appreciation and respect.  DragSmith Farms fields and woods are all dressed up in their favorite fall attire.  Actually, surprised about all the color this year.  We expected the leaves to be released from the trees before the colors were in full force.  Often when stressed they just plain drop off with no hurrah.  

Not sure you know very much about leeks and how they are grown.  They are not as popular here as in the European countries. Leeks are blanched white by piling up the soil around their thick stems to make them turn white and stay mild and tender.  As a result, their layered foliage often conceals a surprising amount of grit.  Trim off the large dark green leaves (save them for making stock) and cut off the root end.  Either cut the leek lengthwise or crosswise then swish the pieces in a bowl of cold water.

Pie pumpkin storage is similar to other winter squash.  Best stored in a cool, dry place, such as a basement or root cellar.  At room temperature it can last several weeks.  At 40 degrees to 50 degrees several months.  Pumpkin is simple to freeze for later use.  Bake, peel and place in freezer bags.
