Happy Labor Day weekend.  Hopefully you are able to enjoy the holiday with family and friends.  We are farmers and don't get the luxury of a day off.  There should be a method to give farmers a break too.  A work force that just goes around to relieve farmers, doesn't cost them a thing and the farmer receives vacation pay.  Whoop, whoop I just invented a new business for  some adventurous people.

Thought we would give you a bit of information about the Dutch flashy heirloom, Dragon Tongue bean. The flat pale yellow pods are streaked with purple which disappears upon cooking. We think they are best eaten raw.  Prefect crunch, nut-like flavor and subtly sweet.  Cook them like a green bean.  Quickly blanched then sauteed with pancetta and crimini mushrooms makes a lovely side dish for pork or chicken.  Be encouraged to pack a few for a snack or kids lunch for they are rich in protein and fiber.  Additionally they offer potassium, selenium, iron, folate, manganese, Vitamin A, C, & K and calcium.
