---- Sunchokes ----

We will feature Sunchokes (Jerusalem Artichokes) this time. A member of the sunflower family, with pretty flowers, and edible tuberous roots. Wash well, no need to peel, just break up lobes to get at any hidden dirt. Eat raw, cut up in a salad - like a carrot. Sweet and crunchy, mild taste. Or cook lightly in a stir fry as a substitute for water chestnuts. If you have never had them, give them a try!

---- Field plan is done ----

This last week we worked on, and finished, the 2022 field plan. That means we can order all of our seeds needed for next year and start thinking about planting. We actually do start planting in our germination shack as early as mid-January. Leeks and green onions take a long time to establish roots, so they get planted early and are held for 3 months before they go out to the field. Looking forward to summer but still have a bunch of projects to work on this winter still.

Thanks,
Ian.
