It's Summer!

It's now officially summer! We've had summer heat and now some rain, so the gardens are growing lush. The strawberries are done for this year, but this week we've added fresh red raspberries and sugar snap peas to the list! We also have a few bunches of beets.

Edible-podded sugar snap peas are delicious to eat raw or lightly sauteed. They are great additions to stir-fries as well, and their flavor combines well with garlic. This easy recipe uses garlic scapes for more fresh taste.

Garlic Stir-fried Snap Peas
2 cups sugar snap peas
3/4 tablespoon oil (any mild one)
1/2 cup chopped garlic scapes
1 1/2 teaspoons fresh lemon juice
Salt and pepper to taste
Cooked rice (optional)

Heat oil in skillet. Stir in chopped garlic scapes. Add peas; cook and stir 2-4 minutes on medium heat.
Remove from heat and sprinkle with lemon juice, and salt and pepper. Serve over rice, if desired. Makes 3-4 servings.
