It is always a good feeling when twenty (20) acres of oats are bailed up and ready to put into storage to feed to our herd of cattle this winter!

We are pleased to see the alfalfa which was planted at the same time and hiding underneath this crop of oats is looking good.

The alfalfa will add nitrogen to the soil and break up the ground for our vegetable field next year.

We are expecting to bail the alfalfa later this summer for a DOUBLE WIN!

Her light bulb moment! Oh your right, I never think to do that at home. I always think lettuce is for salads. Thank you for the tip!

LETTUCE IS NOT JUST FOR SALADS anymore!
 
Lettuce is an excellent source of beta carotene (vitamin A) which is needed for healthy skin, bones, and eyes. It is a fair source of folate, which is needed for healthy cells and the healthy growth of babies during pregnancy in order to prevent neural tube defects.

Really there is NO CRAB in it!
 
Just Zucchini or Summer Squash in it's place.
 
Below is what the Old Bay Seasoning looks like. We have discovered that it is a must in this recipe. We used to shy away from cooking seafood at home because it never seemed to taste very good.
 
Since discovering Old Bay we are enjoy eating seafood from our very own kitchen. It all started by getting Old Bay seasoning for the Not so Crabby Crab Cakes recipe!

Is it Scallions or Green Onions...
 
Call it either one. Scallions are a variety of young onion also referred to as green onions and spring onions. They are made up of a white or purple base with hollow green stalks.


 
Tip: For GREEN SMOOTHIE lovers...
 
You want to change your greens out weekly!
 
Use spinach one week, another week use kale, a different week use collards, and even swiss chard for another rotation.
 
The oxalic acid is different in each of these greens and over time eating the same greens raw blocks the absorption of certain minerals.
 
Also, Eat your greens "cooked" once in awhile because the high temperatures breaks down the oxalic acid drastically and still gives you lots of nutrients.
