Recipes and returns late July 2020

Hold those greens! Before you compost your beet greens, how about making simple, delicious pesto with them? Now that our garlic is in season and coming to you exclusively via your veggie basket, give this recipe one of your co-CSA members sent in:

Beet Green Pesto

1 bunch beet greens

1/4 cup extra-virgin olive oil (add until puree is smooth)

pinch of salt (to taste)

10 grinds of black pepper (to taste)

2-5 cloves garlic (vary by taste & clove size) NOTE: a head of garlic is the whole head, including 6-8 cloves

1 tbsp lemon juice

Puree in food processor and enjoy!

To gain the highest Reduce, Reuse, Recycle practice we can on our farm, we always start with REUSE. We love high-quality, long-lasting, non-disposable tools. Containers are included in our essential tool list. We keep them to a minimum, and reuse them to the max because Recycling is expensive! We don't directly see the financial cost, but we know even the sorting and cleaning is quite a task. Once it leaves our premises, stuff sent to recycling costs us all, maintained as a cost in taxes. Please help us reduce the amount of packaging we use on the farm. Provide us with labelled, reusable containers to pack your shares into (grocery bags, produce bags). We only ask that you don't send grocery bags covered in pet hair. AND, send us back any packaging for reuse. Bags, boxes, elastic bands and so on. Once labelled, put them in your Rubbermaid bin. If you are receiving produce in paper bags, reuse the bag to hold other items, write lists on, then as the liner for your compost bin (or your neighbours' if you don't compost). Recycle if composting not possible.
