Farm Happenings for the week of April 16, 2022

Posted on April 11th, 2022 by Jessica Foote

So Farm Friends!

Yes your pick up is on Easter Saturday, and for those with a drop off in Prince Albert Monday night it is still a go between 5-6pm! I mean we still have to eat regardless of Holidays! I really don't notice any difference between a weekday, weekend, holiday, I mean the livestock needs feeding, the plants need watering, I think perhaps every day is simply a blessing we awaken to, or not, in appreciation for where we are at that moment in time! One of my personal favorite sayings is : " Yesterday is history, tomorrow is a mystery, Today is a gift, That is why they call it a present..." Author Unknown. Anyhow, I ramble to much sometimes, that is the early morning fog/dreamy state coming out!

Happy Easter with the cute bundle of bunnies! I am hoping that this Saturday is warm! And then perhaps we will have some of the bunnies out for visits! I mean they are super cuddly & some are colorful!

If you are planning on doing any backyard gardening this Summer check out our seed selection in the On Farm Mini Market Store https://www.csafarmdurhamkawartha.com/product-category/mini-market/  I am so excited to have available our first crop of seed saving from 2021! You can also inquire about what is available at pick up time!

Soon we will be in the field preparing for planting, I can't believe how fast the season is going, man it is the middle of April!

In your baskets there are Purple Top Turnips on reduced to clear, we still have lots!!! A great way to use them is cooked & mashed with one potato, garlic, parsley, & whatever seasonings you like, & then let them cool and use them as a dip with Tortilla Chips! It is so delicious! If you want to be luxurious add Parmesan cheese!

Yes, the cabbages are massive! I have been making a lot of cabbage salad, also great for large batches of cabbage rolls! Something that is easy to freeze and use for a future quick meal or snack when you are on the run! Also, if you appreciate a healthy gut! Make sauerkraut!

Furthermore, WE HAVE A LOT of #2 Spinach, meaning it has some brown tips, and a few spots, we did this in 1/2 lbs bags! It makes great quiche, or green soup! Simply do a cream soup base, add spinach, then blend!

My recipe (Never exact because I don't follow a recipe!)

2 to 3 TBS of Lard or Butter

1/2 - 1 cup flour

3 liters or more Chicken, vegetable, beef broth

Heat & Stir till thickness is as desired. Add Spinach let cook, then blend

I add a couple cups of milk, & salt & pepper to taste!

And generally the family favorite is a batch of Whole Grain Tea biscuits following the recipe from the Joy of Cooking!

Hope that helps, I am into pretty simple cooking, less then half hour & better make at least two to three meals in that time frame!

Anyhow, see you all this weekend!

Cheers your farmer, Jess
