EGGPLANT!

The beautiful eggplants are here! We grow Italian eggplants (the big ones) and Asian varieties (long and skinny). You will have weeks to explore eggplant dishes. I love eggplant slices marinated in olive oil and spices, then grilled. Babaganouj is a delicious dip, like hummus with roasted eggplant instead of chickpeas. I use a recipe from the original Moosewood Cookbook. RATATOUILLE

WHAT'S GROWING ON

Happy summer! The Bean Hut is open, providing shade and bean picking for kids and adults at all reaching levels! There are bush beans for u-pick too. Zinnias are blooming in beautiful colors--walk down the flower row past the spring flowers for these fresh summer blooms. We are harvesting another batch of carrots! Maybe not as sweet as overwintered spring carrots, but these summer carrots will still be more flavorful than most. Peppers and tomatoes are starting to ripen. Squash and cucumbers continue to grow rapidly. We pick them 3-4 days per week.

 

FOOD BANK DONATIONS
