Posted on June 9th, 2021 by Sarah Wiggins

The warm weather is here and harvests are in full swing! This week you can look forward to lettuce, asparagus, spinach, sweet potatoes, carrots, radishes, cilantro, bok choy, and so much more! You have until 2pm tomorrow to customize your share.

The Fresh Start Market is open!
The Fresh Start Market officially opened this past Saturday at our Food Hub on Spruce Street in Manchester. The grand opening was a tremendous success thanks to all of our funders, partners, community members, and farmers for attending and supporting! Thank you to Mayor Joyce Craig for cutting the ribbon!
The Market is Manchester's first and only Double Up Food Bucks retailer! The market will bring fresh produce and local food products to the neighborhood and customers shopping with SNAP/EBT will be able to take advantage of a 50% discount through the Double Up Food Bucks Program. Hours of operation are Wednesdays and Thursdays from 2pm to 6pm.

Recipes of the Week

Tofu with Lambsquarters

Lambsquarters are a delicious and very nutritious green that you can use just like spinach or any other leafy green! While the preparation may be the same, lambsquarters have even more nutrients with higher levels of protein, calcium, iron, vitamin C,A, and B2 than spinach. Eat fresh in a salad, quickly sauteed with butter and garlic, or try out this stir-fry with tofu.
