A rainbow of veggies headed your way!

Whew! There is SO much fun stuff available for your share next week. I'd like to take a minute to highlight a few of the less common ones:

Fennel!

Fennel is crunchy and slightly sweet, and tastes mildly of licorice... but don't let that scare you away! Folks who don't like licorice often enjoy the taste of fennel. It's often used in Mediterranean and Italian dishes and the bulb, stalk, leaves and seeds are all edible. My favorite thing to do with it is roast the bulb like in this recipe and serve with a perfectly cooked steak and creamy mashed potatoes. Lemongrass!

Widely used in Asian cuisine, lemongrass has a unique citrusy flavor that adds a lovely touch to soups, curries, marinades, stir fries and more! And if you don't use it all right away, you can freeze it for up to 6 months! If you ask me, nothing beats a homemade Asian-inspired chicken soup with lemongrass. Watermelon Radish!

An heirloom variety of Daikon radish, these beauties are crisp, succulent and firm with a mild, slightly peppery flavor. They are bigger than salad radishes and visually exciting, as you can see. You can serve them fresh or cooked and they pair well with fennel (!), apple, cheese, butter, creamy dressings, vinaigrettes, bacon, white fish, mild salad greens, cooked eggs, noodles, citrus... and more!
