We've entered the steamy days of summer.

A few crops are making their first appearance, suitable for the warmer weather we have been having. 

You should begin to notice the box becoming full of color. One exciting food you’ll see this week are our baby tomatoes. These are great for salads or just to eat by the handful.

We've continued to work hard planting all your favorite nutricious veggies.   They are growing almost as we watch them it seems. Although the spring was full of wet ground and cold weather, the crops are flourishing with no trouble. We have our beautiful beets again this week. And as we think of family gatherings during this season, summer squash and cucumbers on the grill come to mind as a wonderful dish. Both of these are included this week and we hope you enjoy eating them as much as we do!!

 

Remember, farming is dynamic and sometimes it doesn't go completely as planned. While this is our best guess of what will be in the box, sometimes we have to sub things based on availability.

CARROTS

Snap a carrot in half and you'll see a carrot is actually made up of two parts: an inner core, or xylem, and outer core, also called a phloem. The starchy sweet part of the carrot is the phloem. The carrot uses the xylem to transport water and nutrients from the bottom of the root to the tip of the carrot tops. The resilience of this two-parted vegetable is evident as temperatures drop. In the presence of frost, this double-layered vegetable begins to transform its starch into sugars, creating a sweeter carrot more resistant to freezing.  This is a great way to enjoy the sugar of nature, wrapped in fiber in a whole food, so that the sugar comes into contact with your body gradually and slowly.  This allows your body to use the sugar instead of store the sugar.  Our bodies frequently work best when introducing slow, gradual changes and adjustments in both nutrition, movement, and mind + body awareness.  Give yourself time and space to make slow changes and notice how it changes the way you feel, move, and interact.
