April 2 CSA Newsletter

What a week! Flooding, sunshine, freezing temps - must be spring in Tennessee. This week we've got lots of cool weather loving greens - kale, collads, arugula, and most exciting - broccoli rabe, which can be lightly steamed or tossed on top of salads. It has the broccoli flavor with a more tender texture. We are half way though our lamb processing, so we continue to get batches back every other week. Expect lots of chops and sausages available for add ons and swaps this week. In other news, we have a beef appointment scheduled for later this month, so we are excited about offering more beef this spring. 

Our little piggies are 5 weeks old now, just one month away from weening. It won't be long before it's time for lambing. Yes - adorable little lambs will be running around the farm. It's the cutest time of year. This is also the last month of feeding hay out, and soon our animals will have enough forage to graze around the pastures. 

In vegetable world, we have officially broken ground on our new garden plot. It will be all hands on deck as we will be planting potatoes and onions soon. We are excited to be growing more food this year. What veggies do you want in your boxes? Now is the time to make your requests!

Special note about extras: Harvie will only allow you to order extras if you have a meat CSA share. If you only have a Veggie share, reply to this email to place an extras order. All extras from Greener Roots Farm and Henosis Mushrooms are received on Tuesday - if your delivery is later in the week, we cannot guarantee optimal freshness.

Arugula

Want to add a bit of spice to your meals? Try adding arugula. This green-lobed beauty is a great peppery addition to your pizza, salad, soup, pesto, or pasta dish. Arugula is part of the cruciferous family. When this cold-loving plant flowers, the flowers come up as delicate white 4-petaled crosses adorned with black markings. The flowers are edible and have a faint peppery flavor that calls back to their leafy counterpart. As part of the cruciferous family, arugula contains sulfurous compounds that help to fight cancer and heart disease. Eating greens like arugula adds nutrient-density to your diet and is a part of whole body health.  Want to try arugula but feel as if it's too pungent? Try lightly sauteing this leaf to create a more subtle flavor. Or, try adding small amounts to foods you’re comfortable with. I.e. make a salad with lettuce and a small addition of arugula, and not an entire arugula salad. Arugula also pairs nicely with citrus so lemon zest, orange pieces, or a citrus-based dressing would compliment the green, pulling out sweeter citrus flavors and reducing the peppery pungency.  Whole health means discovering new ways to include a variety of colorful fruits, leaves, and vegetables.  By including arugula in your diet you can use food as medicine on your journey to health.
