December 1st Happenings - Happy New Year!

Posted on December 31st, 2020 by Melinda Hollyfield

Happy New Year! We are thrilled to welcome a fresh beginning. January is a time for planning and preparing for a new growing season. Our farmers are making crop plans, ordering seeds and enjoying a little more down time. What are your favorite crops? What vegetables do you want to see more of in 2021?

On the livestock front, our lambs and ewes (mama sheep) were separated so the ewes could get bred. Just about everyone is bred now and we will be reuniting the ewes with the lambs soon. All our cows are officially bred as well. Our livestock crew continues to move the cows frequently, making sure there is diversity in their diets as they switch between eating cool season grasses and the hay we roll out for them. The piggies are just hanging out, enjoying any rotten winter squashes and sweet potatoes we have to share.

We spent this last week organizing our freezer, as we recently received a batch of beef and mutton back from the processor. Mutton is not commonly found here in the US, though it is quite popular in India, New Zealand and Asia. While lamb refers to young sheep, mutton refers to sheep older than a year old. Some say the meat is gamier, but we disagree, finding the flavor richer and more complex. In the early 1900s, mutton was often found on American menus and certain mutton cuts were valued at almost the same price as a filet mignon. After WWII, mutton fell out of favor. Here is an interesting NPR article about mutton's history in the US. We are pretty excited about this new offering and hope you will try it and enjoy! If you do, let us know your thoughts!
