November 20th Happening

November is flying by and we are almost to Thanksgiving. What a whirlwind of a year! Luckily, we have a bountiful CSA share to be thankful for this week! Expect a whole bunch of greens such as, lettuce, pac choy, kale, spinach and more! One of my favorite greens that you will receive is tokyo bekana, which is a loose leaf cabbage that can be eaten raw, or cooked. I love to cook diced potatoes in a cast iron skillet, then add the tokyo bekana and garlic at the end. We'll also be sending some tasty turnips and daikon radishes. Daikons are a Korean radish that are excellent in stir frys, or make an easy lacto fermented snack. I'll include a recipe for lacto fermented radishes below. The most exciting addition to your box with this week will be long pie winter squashes, which will make a perfect Thanksgiving pie!
