Hello Members and Happy July 4th!

It has been one hot summer so far.  And very little rain in the last few weeks...until this week 5.5 inches!  But we have very sandy soils and can take all of it. 

We hope everyone is staying cool and enjoying some sun and swims.  We have been to the lake almost every day in the last week trying to keep the kids cool!  ( no air conditioning...)

The crops are looking good out in the field and harvesting is reaching a high!  cabbage, carrots, summer squash and broccoli!  Pepper are flowering and the first succession of corn is just starting to tassel.

Again, I am adding quite a few crops to the inventory and you are able to swap or add items.  

Here are the items on the list this week:  

Carrots!- Sweet carrots out of our hightunnel.  These are great fro a fresh snack.  They will last a very long time if you top them and put them in a container in the fridge, but we can't help but just eat them all up! 

Broccoli- Fresh spring broccoli is so good!  Remember the stems are very important to eat, too, as they have PREbiotics in them that help your gut.  Just peel and chop. Try this recipe with garlic scapes! Caramelized Broccoli with Garlic

Summer Squash/Zucchini- We love summer squash when it starts this time of year.  It is great seared or grilled. Read All about zoodles!

Kohlrabi- We've had a stellar kohlrabi year apparently.  Last year not so much.  It really is a versatile veggie, eaten rew or in a stirfry.  Keep well in fridge for a long time.

Sweet Snap Peas- need I explain?!  Eat fresh!

Garlic Scapes- Replacement for garlic.  I made a homemade mac and cheese the other night and put a bunch of scapes in there- such a great mild garlic flavor! don't forget to make pesto with them!

Red leaf Oscarde Lettuce- This is a really nice red leaf lettuce!  Make sure to wash again!  We do wash, but once you start peeling the leaves apart you are bound to find dirt...organic dirt!  Keep in a plastic bag or premake salad for the week

Spring Mix- becoming a staple in the boxes this year. We've really gotten the hang of this Salanova mix and love it! So easy to harvest, wash and pack and it keep for over 3 weeks in the fridge!

Basil- a little holey from grasshoppers (what!?!) but still great for a fresh pesto or to chop into dishes, salads, sandwiches.

Cilantro- keep in a plastic bag to keep it from wilting.

Napa Cabbage- I have plans to make a simplified kimchi this weekend with scallions, kohlrabi (in lieu of diakon), turnips, carrots and napa...yum!  Look up a recipe on google and try a quart!

Green Cabbage- We absolutely love cabbage in this house.  It keeps for ever, has a ton of nutrients and is so sweet! We love it seared, in a coleslaw, raw on a salad, or made into kraut!  Spicy Tahini Coleslaw

Strawberries- The rains destroyed our strawberries.  We are very sorry, They are complete mush and completely unharvestable.  Not the greatest year for strawberries, I'll admit, but we think everyone was able to get them once.  apologies!
