It sure feels like fall!

It is starting to feel like fall around here with the cool mornings and light breeze in the afternoons. We're topping brussel sprouts, pulling out and curing onions and planning for a big winter squash harvest--more to come on that soon!

And its certainly bringing on my appetite for late summer/autumn flavors ... and so the timing feels just right for the arrival of our sweet corn! The first SWEET CORN of the season will be offered this week in your shares! It is fantastic just fresh off the cobb - doesn't even need to be cooked-- although I know it would be just as tasty grilled and slathered with butter! 

And as the summer starts to shift to fall it's a great time to get some canning and freezing in to save for winter, so we will be offering a few 20lb boxes of red slicer tomatoes as an add on for 50$

We've still got more Saurkraut available (offering krautchi, dilly kraut and delux kraut) so be sure to add on a jar to your share this week!

And this week we've got lots of lettuce available again! A buttery green variety and crunchy romaine and red and green tinged heads. All lush and refreshing, a great vehicle for tossing together a salad with the rest of your box veggies.

We have some of our most beautiful Broccoli and Cauliflower of the season being offered in this weeks boxes as well and were pretty proud of these guys!

This weeks beets will be the gorgeous candy stripe beets! I love to slice them thin and toss on salads but they are also awesome roasted and cooked up just like any other color beet!

I have to go backtrack from what I said last week, because while I had anticipated the end to the summer squash and cucumber season was last week (maybe too eagerly), it appears it isn't quite over yet. The plants have proven to us that they've got a bit more life in them and are continuing to put on nice new zucchini and cucumbers. So we anticipate having a few more weeks of zucchini and cucumbers for your enjoyment as we prepare for the coming of the zucchini and cucumbers cousins the winter squash!  

Having said that, I was grateful to realize they are sticking around because one of my favorite uses of corn is alongside zucchini, so here's a recipe that pairs many of the veggies available for your shares this week!

 

Zucchini, Corn, and Tomato salad:

Ingredients:

Dressing:

- 1/4 cup olive oil

- 3 T white balsamic vinegar (could also sub champagne vinegar or regular balsamic) 

- 1 clove garlic

- 1/2 tsp each salt and black pepper

Salad:

- 2 summer squash

- 2 ears of sweet corn

- 1 1/2 cups mixed cherry tomatoes

- 1 large avocado

-1/4 cup crumbled goat cheese or feta

- 1/2 cup + fresh basil chopped

- flakey sea salt

 

1. Whisk together dressing ingredients and set aside

2. Cut zucchini into thin slices or noodles. If you have one, a spiralizer is great for this. Otherwise I like to just get creative with a potato peeler or mandolin. 

3. Cut the sweet corn off the cob

4. Half the tomatoes

5. Chop the avocado into cubes

6. Toss together corn, zucchini, avocado, tomatoes, basil and cheese. Drizzle dressing over top and then top with flakey sea salt.
