Corn has arrived!

Posted on September 1st, 2021 by Carly Richardson

We have been eagerly anticipated the coming of sweet corn - and we are excited to say that it has arrived! The first SWEET CORN of the summer will be offered this week in your shares! It is fantastic just fresh off the cobb - doesn't even need to be cooked, although I know it would be just as tasty grilled and slathered with butter!

We also have a few extras of shishito peppers - perfect for blistering and serving as a nice tapas/appetizer on your weekend Barbecue!

And as the summer starts to shift to fall it's a great time to get some canning and freezing in to save for winter, so we will be offering 20lb boxes of red slicer tomatoes as an add on for 45$

We are also excited about our fresh and tasty King Richard Leeks - fantastic for frying, caramelizing or tossing raw into salads and slaws!

We've still got more Saurkraut available (offering krautchi, dilly kraut and delux kraut) so be sure to add on a jar to your share this week!

We will be switching up our flower offerings this week and offering Dahlia bouquets! These will be $15 dollars a bouquet composed of mixed dahlias and lovely greenery. Great to bring color into your home or gift to a friend or neighbor!

And this week we've got beautiful Salanova lettuces available as well. These are perfect for your prettiest salad mixes -we've got a buttery green variety and a curly red and green variety that we are in love with! One 'bunch' will consist of two heads of lettuce.

And otherwise were keeping it pretty consistent with abundance of the many summer veggies you have been enjoying all season like peppers, eggplant, tomatillos !

While I had anticipated the end to the summer squash and cucumber season might have been this week, it appears it isn't quite over yet as the plants have proven to us that they've got a bit more life in them and are continuing to put on nice new zucchini and cucumbers. So we anticipate having a few more weeks of zucchini and cucumbers for your enjoyment as we prepare for the coming of the zucchini and cucumbers cousins the winter squash

So here is one of my favorite summery salad recipes from a friend which is perfect for this week and uses sweet corn, zucchini, basil and tomatoes:

Ingredients:

Dressing:

- 1/4 cup olive oil

- 3 T white balsamic vinegar

- 1 clove garlic

- 1/2 tsp each salt and black pepper

Salad:

- 2 summer squash

- 2 ears of sweet corn

- 1 1/2 cups mixed cherry tomatoes

- 1 large avocado

-1/4 cup crumbled goat cheese or feta

- 1/2 cup + fresh basil chopped

- flakey sea salt

1. Whisk together dressing ingredients and set aside

2. Cut zucchini into thin slices or noodles. If you have one, a spiralizer is great for this. Otherwise I like to just get creative with a potato peeler or mandolin.

3. Cut the sweet corn off the cob

4. Half the tomatoes

5. Chop the avocado into cubes

6. Toss together corn, zucchini, avocado, tomatoes, basil and cheese. Drizzle dressing over top and then top with flakey sea salt.

Enjoy !
