This has been a big week for CSA! In the last few days, we’ve doubled our pickup options by adding Pin Oak Park in Willowsford’s own Grove village, Greenheart Juicery in Aldie, and South Riding Town Hall in Chantilly. It’s so exciting to watch the season grow and take shape before our eyes. We’re already more than half full for 2020 with more than three months to go before the first pickup!

When Spring truly arrives, we’ll begin breeding the first generation of Tamalitsa hogs to be born right here on Willowsford Farm. We’re so excited about this cross of heritage breeds and the amazing quality of tender, flavorful meat we’re seeing from them. Our first batch is back from the processor, and I am newly addicted to the Rosemary Garlic sausage—for breakfast, with pasta, and in soup! While the Farm Stand is closed, we’re offering an easy option to stock up before spring with pre-ordered, custom-packed bulk pork boxes. This is a super way to make sure you always have a delicious meal option on hand. Need a ham for Easter? We have some beautiful, bone-in smoked and cured hams ready to grace your table.

While we have a variety of sausage and bacon that can be ordered as “extras” with your CSA shares, the beauty of the bulk box is that you have first pick of some of the more limited cuts, like hams and pork tenderloin. All bulk orders over $100 (subtotal before tax) are eligible for a 15% discount off the retail price. Savvy shopping has never been so tasty. Access an order form here, fill it out and email to farm@willowsfordfarm.com, then pick up your favorites at the Farm Stand on Tuesday February 18 (the last day of CSA) from 4-7 PM. As we ramp up our preparations for Spring, the Winter season winds down. The change in season is more believable this February than usual, with these mild temperatures. The close of Winter is bittersweet. Although we miss the activity generated by our full staff, the Farm Stand, and our summer members, winter time has it’s own dream-like quality where everything in the future seems wholly possible. As the days get longer, and we find ourselves leaving the farm in twilight rather than darkness, the sunsets illuminate the beauty of the sleeping fields and dormant seeds.
