Farm Happenings for December 6, 2023

Posted on December 1st, 2023 by Emily Asmus

Chocolate squash cake was on our menu this week. Its a great way to include generous cups of cooked squash into something I'll happily eat for breakfast, 2nd breakfast and afterschool snack. Its best made with something fleshly like the kabocha or pumpkin. Pan fried Delicata might actually be my favorite winter breakfast. And the acorns spilt and baked with butter and brown sugar are savored with a spoon. It is the season of winter squash. If you have accrued a counter-full, have no worries, they should hold for many more weeks or months.

This afternoon when the snow melted and the rain thawed the field, I got a glimpse of greens that should be harvestable for next week. I was getting nervous I'd soon be buying grocery store greens so I'm thrilled to try to harvest more for us all.

Happy wintertime eating,

Emily
