Happy February!

As of January 29th we are officially at more than 10 hours of daylight each day!

What does this mean? It means that most of the plants we grow (micro greens and all of our tunnel crops) are once again growing at a noticeable rate!

The time of year where we have less than 10 hours of daylight each day has been coined the "Persephone Period" in the farming world. During this time there is little to no plant growth due to the shortened hours of daylight.

For our latitude this is about November 11th through January 29th, which means we made it through the Persephone Period and now we can celebrate the return of growth in our part of the world!

So, believe it or not, the greens and roots you have been eating in the first 2 shares were all planted in early to mid October (before the Persephone Period) in order to have them at this time of year. This involves some out of the box thinking and calculating, and depending on whether our winter is warm or cold, sunny or cloudy, the growth variables will change. It's an extra challenge just in case farming isn't risky enough! ;)

Enjoy the extra light in your day!
