Hello Members - Happy Friday - As we wind down August another picture perfect weather weekend!

Couple of new items in your shares this week - Sweet Dumpling squash - and second is the Anaheim pepper

Sweet dumpling squash is a small winter squash with a hard, cream-colored and mottled green skin. Its sweet flavor, which pairs well with maple syrup and other sweet glazes, makes it a flavorful treat that is equally suited for sweet and savory preparations.  ts flesh is a pale yellow or orange color, with stringy pulp and seeds that can be roasted and eaten as a snack. And as its name would suggest, sweet dumpling squash is just that, and its sweetness is enhanced even further by roasting.

ROASTED SWEET DUMPLING SQUASH WITH TAHINI MAPLE DIJON SAUCE

INGREDIENTS

  • 1 sweet dumpling squash, seeded and sliced into 1/3" wedges
  • 2 tablespoons avocado oil
  • Kosher salt

FOR THE MAPLE DIJON TAHINI SAUCE

  • 3 tablespoons creamy tahini
  • 1 tablespoon maple syrup
  • 1/2 tablespoon dijon mustard
  • 1/2 tablespoon apple cider vinegar
  • 1 tablespoon cold water (*see note)
  • pinch of salt

INSTRUCTIONS

  1. Preheat oven to 400°F.
  2. Spread squash slices out onto a large, heavy duty rimmed baking sheet. Drizzle avocado oil over the squash and toss together using your hands until each wedge is coated. Season with salt and roast for 30-35 minutes until golden brown around the edges and fork tender.
  3. While the squash roasts, make the sauce by combining all the ingredients in a small bowl and whisking until smooth. Add more water if necessary for desired consistency. Adjust salt to taste.
  4. Remove squash from the oven when finished roasting and serve with the sauc

Anaheim peppers have a sweet, bell pepper–like flavor with a bit of mild heat. They are often stuffed with vegetables, cheese, and spices to make chiles rellenos. Dice them for use in salsas―they'll yield a milder flavor than jalapeños or serranos. Or add them to stir-fries for a little extra heat.

Equipment

  • baking sheet

Ingredients

  • 6-8 Anaheim peppers, depending on size
  • 1 pound ground turkey
  • 1/2 cup chopped onions
  • 1 tablespoon minced garlic
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon onion powder
  • salt and pepper to taste
  • 1 1/2 cups diced tomatoes I used fresh tomatoes, but you can also use canned.
  • 2 cups grated jack cheese

Instructions

  • Read all the instructions before beginning.
  • Cut the tops off your peppers, then cut down the side lengthwise. Remove the seeds and veins. Place the peppers on your baking sheet.
  • Preheat the oven to 350 degrees.
  • Place your saucepan on the cooktop and heat over medium heat. Once it is heated, add the ground turkey and onions.
  • Cook, breaking up the meat until the meat is no longer pink. Then add in the garlic, tomatoes, and spices. I like to start by adding in ½ teaspoon salt and ground pepper. Adjust the seasoning from there, after it is mixed in.
  • Continue to cook for about 5-10 minutes.
  • Then remove the pan from the heat and mix in 1 cup of cheese, reserving the other cup to put on top.
  • Fill your peppers with the filling and top them with the remaining cheese. Place in the oven and bake until the cheese is golden brown and the peppers are tender.
  • That is it! They are done and ready to enjoy!
