Farm Happenings for August 11, 2022

Hello Members - Happy Friday and Weekend!!!  It sure has been hot and dry weather for this past month - our farmers are irrigating around the clock!  Forecast over the next 10 days - is calling for showers and thunderstorms - so lets hope we have a plentiful amount and a good soaking for the plants!

Sunflowers are one of our summer icons - and embody all the joy of a bright summer day!

Starting our fifth week and this will also be our second fruit share week! We have 3 fruit share deliveries left which are scheduled for 8-25, 9-22, 10-06 

 

 First and foremost the fruit shares are delivered with the vegetable shares to the same location and same time.  Second - the fruit shares are all the same - no choice is involved - the best available fruit is chosen for the time frame of the share. Third - the fruit shares will be packed in the brown cardboard boxes - they will have a label that says fruit share and has your name.   The fruit shares are provided by Altamont Orchards and a couple of the fruits featured in your share this week will be - peaches and nectarines!  Please - Do Not Return the containers or bags that the fruits are in. Please return the share boxes!  Thank you!

  

Creamy Peach Icebox Cake

    • Trim brown crusts from pound cakes using a serrated knife. Discard crusts. Cut each cake into 1/2-inch-thick slices. (You will have 18 to 24 slices.) Line bottom and sides of a 9- x 5-inch loaf pan with plastic wrap, allowing a 4-inch overhang on sides. Place 1 tablespoon of the preserves in a microwavable bowl; chill until ready to use.

    • Arrange 6 to 8 cake slices, side by side, to cover bottom of pan in 1 layer (trimming slices, if needed, to fully cover bottom). Spread 2 cups ice cream over cake layer to edges of pan. Spread half of the remaining preserves (about 1/3 cup) evenly over ice cream layer. Repeat process with 6 to 8 remaining cake slices (trimming if needed), and remaining ice cream and preserves. Arrange last 6 to 8 cake slices over preserves layer. Pull plastic wrap overhang up and tightly over cake. Freeze 8 hours.

    • Beat cream and vanilla extract with an electric mixer on high speed until foamy, 30 seconds. Gradually add powdered sugar, beating until stiff peaks form, 1 to 2 minutes.

    • Remove cake from freezer. Holding the plastic wrap overhang, lift cake from pan; invert onto a platter. (Discard plastic wrap.) Spread whipped cream over cake.

    • Melt reserved 1 tablespoon preserves on HIGH until just melted and smooth, 10 to 15 seconds; mash large lumps with a spoon. Gently stir in peach slices to coat. Spoon mixture over cake; serve immediately

       

      20 Minute Grilled Jerk Chicken with Mango-Nectarine Salsa

       
      This chicken is nothing short of awesome. It's fast, healthy, uses in-season produce, and it's just really freaking good!

      Ingredients

      • 1 1/2 pounds boneless, skinless chicken breasts
      • 1 tablespoon jerk seasoning
      • 1 tablespoon honey
      • 2 tablespoons olive oil
      • coconut rice, black beans, and avocado, for serving

      Mango-Nectarine Salsa

      • 2 ripe nectarines, thinly sliced
      • 1 ripe mango, diced
      • 1 fresno or jalapeño pepper, seeded and chopped
      • juice of 1/2 a lime
      • juice of 1/2 a lemon
      • 1/4 cup fresh cilantro or basil chopped

      Chile Lime Butter

      • 4 tablespoons butter, melted
      • 1 fresno chile pepper, sliced
      • zest of 1 lime
      • 1 tablespoon honey

      Instructions

      • 1. Preheat an outdoor grill or grill pan to medium heat. Oil the grates.
         
        2. In a ziplock bag, combine the chicken, jerk seasoning, honey, olive oil, and a pinch each of salt and pepper. Toss to combine. Grill the chicken for 5-8 minutes per side or until the chicken is cooked through. Remove from the grill. 
         
        3. Make the salsa. In a medium bowl, combine the nectarines, mango, jalapeño, lime juice, lemon juice, and cilantro. Toss to combine.
         
        4. Divide the rice among bowls. Add the beans, avocado, salsa, and chicken. Drizzle the chicken with chile lime butter. Enjoy!

      Chile Lime Butter

      • 1. Stir together the melted butter, chiles, lime zest, and honey. Drizzle over the warm chicken

      New Veggies

      Italian Frying peppers may be referred to as Italianelles or Sweet Italian Long peppers. Unlike some peppers that are unpleasantly bitter and acrid when unripe, the Italian Frying peppers are sweet delicious in all stages of ripeness, whether green, yellow or red.The walls are thin and tender, encompassing few seeds that are perfectly edible and add a sweet taste to the pepper. The raw peppers are succulent and crisp, but then transform into a creamy smoky treat when cooked. They offer the perfect combination of sweetness and crunch, with a complex yet delicate roasted flavor.

      Plum tomatoes are long, plum-shaped, dense tomatoes grown specifically for making tomato sauce. Plum tomato plants have been bred over hundreds of years to produce the best tomatoes for making tomato sauce. They tend to have excellent flavor and a thick, dense texture and are a good ingredient for tomato juice, sauce, soups, and stews. Plum tomatoes are often roasted with olive oil, sea salt, and/or garlic.

      VERY IMPORTANT - Please return your white and brown boxes - we have to purchase them - and they can be recycled many times and saves us a great deal of money - Thank you for your help with this!!!
