Sunchokes galore in Nov 2021

While we dig, we get a lot of questions about how to eat sunchokes. The answer is stunningly easy: any way you'd eat a potato. Steamed, sauteed, deep-fried, roasted, steamed, baked, or raw. Not everyone eats potatoes raw, but we suggest everyone try sunchokes raw. The nutty, sweet crunch is compelling. It's hard to stop eating them. Pair them with humus or another dip of your choice and put them on a veggie platter. Sunchokes are also great in stir-frys and soups. They thicken up any soup or stew to perfection.

So, while we dig into the patch to get the last few white ones out, dig into your fridge and recipe book, get out some chokes and cooking tips and enjoy the taste of a native root. Select red or white chokes. Maybe you like one better than the other? Another great tip is to pair them with potatoes. Scalloped, steamed and roasted are three classic ways to eat potatoes and sunchokes together.
