You'll be relieved to know we had the plastic off the high tunnels prior to this weekend's heavy winds. The frames can stay up, as they don't catch much wind. The majority of our permanent crops, mostly herbs, as well as semi-permanent strawberries and lemongrass, are now straw mulched for the Winter.

Today finds us transforming the coolers to warmers by setting up heat in them to prevent freezing as temperatures dip. Out in the field we're bringing in the last of the beets, carrots, cabbage and baby scallions. Tip: did you know you can keep a few onions in your fridge/basement and bring them out mid-Winter when scallion supply dries up. They'll sprout green shoots which make a great replacement for green onions in soups, salads and sautees.

We're also putting finishing touches on our Winter vegetable processing plan. As the majority of our locations are outdoors, we are setting up indoor space to prepare Nov-Dec vegetable baskets.
