Farm Happenings for the week of December 3, 2022

So not much is new, well I mean we are busy as per usual, but nothing terribly exciting!

The to do list includes; seed inventory, chimney cleaning, wood splitting, weeding, horse training and exercising, and that is about as exciting as it gets!

We still have an incredible selection of greens for this time of year, the only sad thing is the Spinach is almost all #2, it is getting brown tips in all this hot weather. But it makes for great cooking! We have done quiche, green soup, omelettes, sauteed spinach, spinach dip, and I mean all you have to do is search online for other great ideas!

Another offering for you cabbage lovers Napa cabbages, the last of our Savoy (These guys are huge!) , and the super delicious Deadon Cabbage, which is a gorgeous winter storage savoy, that is purple and lime color! And oh, so sweet as it was seasoned by the cold weather this fall!

I feel so blessed by all the incredible food we have, and all I have to do is go to a family Christmas party to figure out how spoiled I am! I mean the fruit is sad, melons are so bland, the carrots, not sure what they do to them but no wonder kids don't like veggies! Unless the veggies have dip , they just aren't that edible. But at home we enjoy them all raw on a regular basis, and go back for seconds.

So this is for those that are wondering what to do with the #2 Dino Kale! This is a must try no fail (At least not for me!), hit no matter where I have taken it! 

Kale/Chard Sausage Soup

Sausage, Potato & Swiss Chard Soup

Recipes Swiss Chard

1 lbs (500g) sausage

1 tbsp (15ml) extra-virgin olive oil

1 onion chopped

2 cloves of garlic minced

3 cups (750ml) cubed peeled potatoes

1/2 tsp ( 2ml) dried italian herb seasoning

1/2 tsp (2ml) pepper

1/4 (1ml) hot pepper flakes

3 cups (750 ml) water

1 cup (250ml) sodium reduced chicken stock

2 cups (500ml) packed coarsely chopped swiss chard leaves

1/2 (125ml) shaved pamesan cheese

Prep:

Cut sausage into 1-inch (2.5cm) pieces. In large saucepan, heat oil over medium -high heat ; brown sausage. Transfer to bowl. Drain fat from pan.

Add onion, garlic, potatoes, Italian herb seasoning, pepper, and hot pepper flakes to pan; fry over medium heat, stirring occasionally, until onion is softened, about 5 minutes.

Add water and stock; bring to boil. Return sausage to pan; reduce heat, cover simmer until potatoes are almost tender, about 7 mins. Add swiss chard; simmer, covered, until tender, about 5 minutes. Top with Parmesan cheese.

So my adjustments!

I add a couple cups of carrots

I cook in lard, bacon grease, or butter! ( Olive oil is not a fat you are supposed to heat to high temps, it is great and healthy as a salad dressing though!)

Sausages & all the pan drippings go into the soup, why would you waste the nutrition !?!

And when making soup I use any water I have steamed or boiled (Which I rarely do, because boiling takes the vitamins & minerals out of your food!) veggies in that week & use the water in the soup stock! I do cheat & use bouillon if I have no broth made, or frozen in the freezer!

Anyhow, I hope you enjoy a hot bowl of soup on a cold damp day! A side of tea biscuits is great!

Forgot to mention starting December we will start offering wagon rides, at the moment the tongue on the sleigh is needing repair (Someone did not loosen it off before tugging on it with the tractor & snapped it! The little things in life.) They can be booked through the Mini Market or Online under Events! As well as the Petting Zoo! I think the page is operational still! HaHaHa! I had better check!
