You can't grow without experiencing all that Mother Nature will send your way. I think it has rained and stormed nearly everyday for the past 3 weeks and still more in the forecast for the next 7 days. I think I speak for everyone that we could use a break.

This week I have started putting up cherry tomatoes to use over the winter. My hands down favorite way is to cut in half, put on a cookie sheet covered with parchment paper, drizzle with olive oil and minced garlic and roast at 400 degree oven for about 20-25 minutes. You may need to turn depending on your oven temps. I then let them cool and place in a single layer in a freezer zip lock removing all air with a straw. They will freeze flat like piece of paper, allowing you to take out only what you need. We use them in omelets, stir fry, sauce, and add to pasta, pizza and soups. Let me know how you like to put up some of your favorite summer crops for later use this winter.
