Farm Happenings for July 7, 2020

Dear Friends,

I'm going to focus on the food this week because we've been seriously enjoying the veg from the field. The culinary highlight of the week was homemade pita (super quick and easy!) stuffed with sauted lamb and zucchini, cucumber salad, an awesome herb oil, and yogurt. We all agreed it has to be a new weekly staple. Any grilled or roasted veggies or meats would have been delicious. We've already tried it again with grilled chicken and greens. The highlight was the herb oil though. I chopped up a whole bunch of parsley and some sweet onions, added too much salt, a very generous pour of olive oil, and juice from half a lemon. There was enough oil that you could drizzle it. I'm surprised there were pitas left to stuff because we were using them to scoop up the herbs and snack on.

For breakfast this AM I chopped up a whole bunch of dill, a bunch of greens, and a bunch of onions. There were topped with a bowl of whisked eggs and thrown into the oven for frittata. This is the BEST way to get through veggies. We put almost anything into frittata except cucumbers and raspberries.

Another dinner highlight this month was this insane brisket. It is fantastic with fennel and sweet onions. I've also used carrots. Parsley is great on top. I imagine it would be excellent with tofu as well. Huge hit.

Some other early summer staples in our house include: raspberry spelt muffins (which I've started using in place of wheat flour), zucchini basil muffins, zucchini fritters (I add herbs and sometimes make them into mini pizzas), and zucchini basil soup. I'm excited to try making this pistachio-based dry ranch dip for cucumbers and carrots.

We're working on keeping the weeds in line, everyone hydrated, and ourselves sane. We continue to be in awe of the fact that we're providing vegetables shares to 80 local families. We never imagined there would be such interest and support. We're humbled and grateful to be on this journey with you all. Please don't hesitate to let us know how we can do better!
