Digging up our root crops; Dan heads to the BWCA!

As you may have seen in your most recent shares, we have begun digging our root crops! This week we've dug our red potatoes, garlic and will start digging our carrots on Friday. We just love pulling up these little treasures from the ground!

We've been pretty happy with the harvest so far and the flavor of the red potatoes has been outstanding this year. If you haven't tried some yet, make sure you get them in your next share. We don't expect to have these red potatoes for long! We'll start digging our white potatoes in a couple weeks. They usually take a bit longer to fully size up.

We use a combination of tractor assistance and manual labor to dig our potatoes. We have an attachment that digs up the potato plants and loosens the soil but leaves some potatoes buried under the lose soil. This process sure beats digging by shovel or potato fork!

We are also digging our garlic this week! This is probably our favorite root crop to dig because we have to wait so long. We planted this garlic last October and are finally growing it about 9 months later. After our garlic is dug, it needs to go through a drying and curing process before it will be available in your shares. This usually takes 2-3 weeks.

 Finally, I (Dan) am heading to the Boundary Waters Canoe Area for a camping trip this week. CSA Shares and Farmers Market are still happening thanks to my amazing wife Lara and our wonderful farm staff this year. Our week break from the CSA will be the week of August 15th.
