The spring equinox and the start of our new crew members both happen this week! Farm work cranks up a notch every year at this time, and then cranks up yet another notch in April and then again in May. May through September is a sustained wild ride here on the farm. So, we are taking deep breaths this time of year as we prepare mentally and physically for the months ahead.
The stars of this week's harvest are Kale, Microgreens, and Sugar Snap Pea Shoots! They are all very happy with the weather and taste incredible.
As our family recovered from illness this past weekend, this Lemon Garlic Vinaigrette with Kale recipe is what our kids requested.
Noodles, protein, and Sugar Snap Pea Shoots with this Easy Asian Sauce is super easy and delicious. (We use honey instead of the brown sugar it calls for.)
And our Microgreens are a nutrient-packed dose of goodness. Including them in smoothies (with frozen fruit harvested from our orchard last summer) allowed our kids to keep getting green nutrition while they were sick and not eating real meals.
