We forgot to tell you all about how to store Eggplant! With apologies for not pointing it out until now, Eggplant is damaged by refrigerator temps. Keep it on your kitchen counter! It also should be used fairly quickly. It doesn't have as long as a life after harvest as most of our veggies.  W1 read more »
