Summer is heating up and everything is soaking in the sun. The cows have plenty to eat and their calves are frolicking around like puppies...although they all would like a rain shower to cool them down! The vegetables are steadily growing, which means more crops are being harvested. The zucchini plants are pushing out fruits and the cucumbers are multiplying on the vines. It's hard to keep up and we're just getting started! Hope you're ready for some full-on beautiful food, because that's what we are sending your way. Let's celebrate the sunshine and eat with gratitude.
If you end up with beets in your box this week, I strongly encourage you to roast and marinade them for some killer beet, parsley and goat cheese sandwiches. I've been singing the praises of this trifecta of flavor and nutrition, and hope to inspire y'all to get your beet on. The recipe that I'm sharing suggests using arugula, but we're hooked on the flat leaf parsley for its full flavor. Roast and marinade the beets ahead of time so that you can assemble the sandwiches in no time flat. You'll feel like a superhero every time you eat one.
On a logistical note, just a reminder to bring bags when picking up at your drop site. We will provide bags at the site just in case you forget.
