Farm Happenings for August 4, 2020

Posted on July 31st, 2020 by Aspen Moon Farm

CSA is back in action and will be here for you every week until the end of October!  We are now harvesting some glorious summer crops:  tomatoes, zucchini, cucumbers, New potatoes, celery, Snap Beans, spicy peppers, unique onions, and more....  Arugula and Spicy Greens are also just started to return to the harvest.  See last week's "Happening" note for important info about Heirloom tomatoes and Celery.  Snap Beans aren't just green beans, they come in pretty colors too! We grow classic green beans and Dragon Beans which are flat like a Roma bean, cream-colored with lavender swirls, and they cook and taste similar to green beans.  Mother Nature is so cool with her many varieties!  They used to be called "string beans" but the stringyness was bred out of them over time.  Just snap off the top and eat raw, steam with butter and lemon juice, add to soup, or make "Frijole Mole", a great recipe by Barbara Kingsolver featured in her book Animal, Vegetable, Miracle about eating seasonally (you can google this recipe, or better yet- order the book because it is a great read about living a full-year of seasonal eating).  Cucumbers also come in different colors and shapes.  We grow classic green, blonde (which taste almost skinless), and Japanese Suhyo (aka "burpless").  They all have great flavor and rarely need peeled.  More cucumbers will be coming down the shute.  Eggplant and sweet peppers are on their way too....  Yum!
