Farm Happenings Week 5

Posted on June 12th, 2020 by Aspen Moon Farm

Goodbye Arugula and Spicy Greens; Hello Carrots and Beets!  Eating seasonally is so rewarding!  Though it can take a little getting used to, you are sure to eat the best tasting produce because it's what's in season.  Did you know you live in the region that grows the best beets?  Beets are wonderful peeled and eaten raw or they get even sweeter steamed or roasted (you can easily "slip" off the skin with your fingers after they are cooked- be sure to cook until soft from the prick of a fork).  Radicchio is another June treat; a beautiful bitter green favored by Italians.  Our bodies need bitter greens; they offer fantastic nutrition, aid digestion, and balance blood sugar.  I love the flavor of radicchio and find the more I eat, the more I crave it.  It is wonderful sliced thin and mixed into salad.  Spectacular on the grill or roasted; quarter the head, brush with olive oil and grill or roast until the edges are somewhat charred, remove and sprinkle with balsamic, parmesan and salt & pepper.  The large outer leaves also make great lettuce wraps- a great appetizer for the cook!
