This week - the Acorn Squash!

This weeks squash is the acorn squash! Acorn squash are one of my favorite squash to use for stuffed squash with its personal meal size and decently large central cavity.

Growing up my grandma made stuffed acorn squash every thanksgiving! She would always make it by slicing it in half, scooping out the seeds, and putting in a nice big pat of butter, a decent sprinkle of brown sugar and filling it up with peas...not sure where the pea recipe came from, but that butter and sugar certainly made me fall in love with the acorn squash as a child and I still love it today! Nowadays when I am not feeling up for peas, I love to stuff it with a caramelized onion, wild rice and sausage filling!

Since it is a smaller squash, we will be sending them in pairs (which makes a perfect stuffed squash meal for 4). We grew two varieties this season - Tiptop PMR (green) and Starry Night (green and yellow speckled).

We will be continuing to offer add ons of a variety of winter squash and a few other items this week:

  • 'Nutterbutter' mini butternut squash - $4.50 each

  • and finally some decorative Large Gourds that would be lovely on your front porch 
  • Paprika peppers in 2lb orders - you can dry these in your oven (or dehydrator if you have one) and grind them to make your own paprika powder! They make the most flavorful paprika spice I have ever used!
